Abstract

Arsenic (As) naturally occurs in water and long-term exposure is linked with health problems, possibly influenced by interindividual variation in nutrient intake and genetic variation. Objective Examine As metabolism and elimination efficiency related to nutrient intake and genetic variants. Methods 415 healthy women from As-exposed regions of Northern Mexico were interviewed, their nutrient intake was estimated, their urinary As species were measured, and DNA genotyped. Results In gene-nutrient adjusted models, methionine was the only nutrient associated with increased As metabolism, particularly in the presence of BHMT. Conclusion Methionine may play a role in one-carbon As metabolism, particularly within certain genetic variant subgroups.
